BAGUIO CITY – Tam-awan Village is on their 9th year in staging the prestigious Tam-awan International Arts Festival (TIAF) here on May 22 until 26, 2019.
Chanum Foundation, Inc. headed by Cordillera Solar Artist Jordan Mang-osan, the managing organization of Tam-awan Village, has decided to focus on celebrating the country’s indigenous cuisine and delicacies for the 9th edition of the TIAF.
The theme highlights Philippine cuisine and delicacies as the Filipinos are known for having one of the best tasting foods in the world.
Having a taste of a Filipino dish is akin to having a taste of Filipino culture. Each island and each city has its own special dish and flavour.
Ingredients locally-sourced make each dish an original and a local delicacy is produced. An example would be the coconut-enriched dishes of the Bicol region, a place with a plentiful source of coconuts
all year round.
Aside from ingredients, Filipino food often reflects the way of life and thinking of the people from each island, city and town. The “pinikpikan” of Cordillera, a chicken delicacy, is another original for the reason that all parts of the chicken are used and the broth is made even more flavourful with “etag,” a salted piece of pork that is sun-dried.
Filipino cuisine also reflects its rich historical past. There are many dishes that are deliciously influenced by the different countries from friendship to conquest. Filipino cuisine is peppered with Spanish influences and even Chinese influences Chanum Foundation, Inc. has invited speakers to discuss these particular rich influences whilst focusing on the cultural and richness of Filipino cuisine and delicacies.
Registration of participants for the activities starts at nine (9) o’clock in the morning. On the first day, Tam-awan resident artists, with other invited Baguio artists, will have an art exhibit opening at SM Baguio in the afternoon.
